blended chia seed pudding

This easy-to-make, vegan blended chia seed pudding is packed full of fibre and protein and only takes a few minutes to put together! Perfect as a snack or double the recipe to make meal-sized portions! Perfect for meal prep and on-the-go eating!

And if you’re like me and have never been able to get over the texture of chia seed pudding, this blended chia seed pudding helps get rid of the seed-y texture that some of us don’t like.

This is one of my absolute favourite meal prep treats! Having these stocked in the fridge is perfect for busy weeks when I forget to eat or don’t have time to get a snack or meal ready – it works for both! The versatility of this recipe is also what keeps it as a staple in my meal prep. I never get bored being able to switch up the topping or change up the flavour week by week.

If you’re looking for a snack or meal that takes 5 minutes to make, is loaded with protein and fibre and is naturally gluten free and vegan, you need to make this recipe asap!

What you need:

  • 3 tbsp chia seeds
  • 3 tbsp cocoa powder
  • 3 tbsp maple syrup or agave syrup
  • 1. 5 cups of plant-based milk (I love the Silk protein milk for extra protein!)
  • 1 tbsp nut butter (I alternate between peanut and almond)
  • Splash of vanilla

To make this incredibly creamy blended chia seed pudding, simply place all ingredients in a blender and blend until smooth! This recipe makes 4 snack-sized servings – double this recipe for breakfast-sized portions! I love serving this with coconut whipped cream and coconut flakes. Yum!
